Barrel Aging: Aging beer in wine barrels has been the standard until the birth of steel kegs. Yet aging beer in spirit barrels to carry over some tequila, rum and bourbon flavors in the beer has become a new ground of exploration since the 80’s. Let’s sip and savor some big bold beers.

Beer & Bread: Craftmanship at its best and simplest. Let’s see how French bread, Sourdough, All grain breads pair with select beers! We’ll also talk about baking with beer and upscaling spent grains!
Ingredient themes
Hop: Let’s navigate the world of hops. Rubbing some varieties first to understand what hop is all about, then exploring some signature beer styles like IPA, IIPA, IPL, CDA.s, NEIPA….. Maybe we can even infuse some beer with hops during that session ?
Grains: Barley malt is the essence of beer but it can be toasted, roasted, caramelized,…. leading to endless flavor possibilities. Let’s talk color, flavor and expand beyond barley malt, to oat, rye, wheat and why not … some gluten free grains!
Yeast & Bacteria’s: Just like Wine, Kimchi and Cheese…. Beer is fermented to convert the sugars into alcohol but also to develop unique fermented flavors! In this session we will look at the impact of lager and ale yeasts, wild yeasts and bacteria’s on the beer signature!
